Sweetcorn fritters with bacon and tomatoes
Sweetcorn is a great fritter ingredient, bringing little bursts of sweetness to each mouthful. The fritters soak up the cooked tomato juices beautifully.
Method (serves 2)
- Mix all the fritter ingredients bar the oil together in a bowl until smooth.
- Put the bacon and tomatoes under the grill.
- Heat a frying pan and add the oil, and using a spoon ladle the fritter mixture into the frying pan to make neat but fairly thick rounds.
- They should take about a minute on each side.
- Pile them up on a dish and top with the bacon and juicy tomatoes.
Ingredients
For the fritters:
- 3 tbsp Polenta
- 55g Plain flour
- 6 tsp Baking powder
- 1 Egg beaten
- 5 tbsp Milk
- 2 Spring onions
- 125g Sweetcorn
- 2 tbsp Sunflower oil
- Pinch of cayenne pepper
- Pinch of salt
For the topping:
- 6 Rashers of streaky bacon
- A bunch of cherry tomatoes
