Sweetcorn fritters with bacon and tomatoes

Sweetcorn is a great fritter ingredient, bringing little bursts of sweetness to each mouthful.  The fritters soak up the cooked tomato juices beautifully.

Method (serves 2)

  • Mix all the fritter ingredients bar the oil together in a bowl until smooth.
  • Put the bacon and tomatoes under the grill.
  • Heat a frying pan and add the oil, and using a spoon ladle the fritter mixture into the frying pan to make neat but fairly thick rounds.
  • They should take about a minute on each side.
  • Pile them up on a dish and top with the bacon and juicy tomatoes.

For the fritters:

  • 3 tbsp Polenta
  • 55g Plain flour
  • 6 tsp Baking powder
  • 1 Egg beaten
  • 5 tbsp Milk
  • 2 Spring onions
  • 125g Sweetcorn
  • 2 tbsp Sunflower oil
  • Pinch of cayenne pepper
  • Pinch of salt 

For the topping:

  • 6 Rashers of streaky bacon
  • A bunch of cherry tomatoes
